210 g (1 cup) zucchini
20 g (4 tbsp) reduced-fat parmesan cheese (grated)
1 g (1 pinch) salt
1 g (1 pinch) ground black pepper
- Preheat the oven to 425°F/220°C. Line a baking sheet with parchment or baking paper.
- Wash and dry zucchini, cut into 1 in/2.5 cm thick slices. Arrange zucchini slices on a baking sheet, sprinkle with salt, and ground black pepper.
- Spread a thin layer of grated parmesan cheese on each slice of zucchini. Bake for 15–20 min, or until cheese turns golden brown. Serve and enjoy!
